Recipe: Wheat Thai Peanut Soba Salad

Ingredients

  • Whole Wheat noodles, prepared according to package directions (thawed and ready to use, boil or microwave) - 16 oz
  • Red onion, sliced - 1/2 cup
  • JalapeƱos, sliced - 1/2 cup
  • Cucumber, seeded and sliced - 1/2 cup
  • Sweet chili sauce - 1/2 cup
  • Carrots, shredded - 1/4 cup
  • Peanuts, shelled - 1/4 cup

Preparation

Combine all ingredients in a mixing bowl and toss to incorporate.

Refrigerate for up to 4 hours before serving.
