Recipe: Whole Grain Noodle Caprese

Ingredients

  • Whole Wheat noodles, prepared according to package directions (thawed and ready to use, boil or microwave) - 16 oz
  • Grape tomatoes, halved - 1 cup
  • Mozzarella pearls - 1 cup
  • Red onion, sliced - 1/2 cup
  • Basil, chiffonade - 1/2 cup
  • Olive oil - 1/4 cup
  • Garlic, minced - 1 tsp
  • Balsamic glaze - 1 tbsp
  • Salt and pepper - TT

Preparation

Combine all ingredients in a mixing bowl (excluding the balsamic glaze) and toss to combine.

Refrigerate for up to 4 hours before serving. Garnish with balsamic glaze and serve immediately.
