Recipe: Whole Grain Noodle Caprese
Ingredients
- Whole Wheat noodles, prepared according to package directions (thawed and ready to use, boil or microwave) - 16 oz
- Grape tomatoes, halved - 1 cup
- Mozzarella pearls - 1 cup
- Red onion, sliced - 1/2 cup
- Basil, chiffonade - 1/2 cup
- Olive oil - 1/4 cup
- Garlic, minced - 1 tsp
- Balsamic glaze - 1 tbsp
- Salt and pepper - TT
Preparation
Combine all ingredients in a mixing bowl (excluding the balsamic glaze) and toss to combine.
Refrigerate for up to 4 hours before serving. Garnish with balsamic glaze and serve immediately.
